The salamis are processed by using only fish caught mainly in national waters (never farmed fish) in a facility Cosimo opened in Livorno. The first-rate artisanal processes are carried out in full compliance with all relevant regulations as well as to preserve the purity and high quality of the raw material.

The product is then cooked at low temperatures to guarantee a minimal loss of nutrients. In addition, completely natural spices and seasonings are used to make a tastier product as well as to act as preservatives.
